For most other foods, date labeling is voluntary and is generally determined by food manufacturers rather than mandated by the federal government. The system isn’t a malicious conspiracy, but it can create significant confusion—and that confusion contributes to food waste. Here’s what those dates actually mean: 1. Most Dates Indicate Quality, Not Safety Terms such as “Best if Used By,” “Best By,” and “Enjoy By” generally indicate when a manufacturer expects a product to have its best flavor, texture, or freshness. That said, a date on a package should never be viewed in isolation. Storage conditions, whether the package has been opened, and the type of food all matter.   2. Why Do Manufacturers Put These Dates on Food? Manufacturers use date labels for several reasons, including helping consumers identify when a product is likely to be at its best quality and helping retailers manage inventory. A manufacturer may choose a relatively conservative date because it wants consumers to experience the product while it still meets its desired standards for taste, texture, and freshness. A product can therefore remain edible after its “best by” date even though its quality may gradually decline.
